Come Eat With Me: A Lunaria Estate Lifestyle Invitation
I’m looking for recipe taste testers for a very special project I am working on! Do you want to come feast on nutrient-dense, organic, locally grown meals I’m creating over the span of this summer? For me, being a foodie is what got me into gardening in the first place. Once I had tasted homegrown veggies, I was hooked. Food grown under greenhouses or in depleted soil doesn’t have the same taste or nutritious benefits that my homegrown veggies do. So I decided to take matters into my own hands. I wanted to impress myself with ridiculously good food every single day. I wanted to make sure I was getting all my minerals and vitamins, loading up on antioxidants, and tracking my habits long enough to know I’m truly getting enough of everything essential—and even the nutrients they don’t count as essential but absolutely should, like choline.
Knowing how to create balanced meals is key to keeping myself full and nourished, so I share these meals as a way to help others eat not just for taste, but for full nutritional benefit.
I don’t believe anyone needs another diet. What we need are recipes that help us incorporate the powerhouses—the foods we earn with intention—so we can maximize our health. And we need the kitchen wizardry to pull it all together. I’ll be sharing recipes for batch cooking and creating highly nutritious meals that are well balanced. We still might need some supplementation, especially here in Vermont where the sun is sparse, but food should be our foundation. My life’s mission is to make it not only healthy but also incredibly tasty.
The truth is, I eat everything. I mean everything from exotic foods like Frog Legs to humble ol’ potatoes. The only things off-limits in my lifestyle are fast food, article food coloring, soy and corn oil, preservatives, and sulfites. Real sugar and simple carbs are a once-a-week treat. So yes, I will be eating that birthday cake—I don’t deprive myself of celebratory foods. I don’t have any sensitivities or allergies anymore. But let me know you what—I used to, and not only that but I used to be 80 pounds heavier due to baby weight I just couldn’t seem to lose. With my lifestyle improvements, I fully resolved my IBS and slowly the weight came off one the course of 2 years.. The was over 15 years ago! Of course, if you are allergic or sensitive to a food, that is your body’s voice saying, “Don’t eat that again.” And you should absolutely listen to what you body is telling you!
Getting tuned in to what my body needed meant realizing that all the restrictive eating plans had left me with poor health. I was a total yo-yo dieter who tried every fad diet from the age of 12 all the way into my 30s. After my son was born, I was frustrated and didn’t think I would ever get back to my pre-pregnancy weight of 130. But it is possible to revitalize your digestion through clean eating. The sooner you address it, the better the outcome, although it;s harder the older you get, it’s not impossible. I might not be a doctor, at least not yet, but I believe everyone should have the knowledge and ability to cook healthy, nutritious meals for themselves and their families. Lifestyle was my way in—and feeling and looking amazing are the reason I keep going.
